I’ve posted a couple of times before about our 30 day operation to ‘reboot’ our evening meals. You can read about the first two weeks here, and the second couple here.
Below is the complete list of meals, and I’m feeling pretty pleased looking at what we all tried. They reflect a range of different meat, tofu and vegetable meals, and include frittatas and tortillas, pasta and rice, pizzas and salads, soups and sandwiches.
Over the 30 days we cooked and ate:
- Easy homemade macaroni and cheese with curried carrots*
- Chicken BLTs
- Pan-fried wholewheat pizzas
- Slow-cooker Korean short ribs with herbed barley
- Grilled chicken with peanut curry sauce and coriander lime rice
- Sloppy Joes and oven chips
- Creamy Greek chicken noodle soup
- Asian slaw with chicken
- Black bean and goat cheese quesadillas with tomato salad
- Soba noodles with greens and crispy tofu
- Basic BBQ roast chicken and wholemeal couscous with tomato and herbs
- Maple candy pork chops
- Chicken hoisin burgers with red cabbage and pecorino salad
- Pea and prosciutto frittata
- Steak sandwiches with gruyere and and white beans with spinach
- Sweet and spicy tofu bowl with broccoli
- Crispy rice omelette with peas and cucumber salad
- Zucchini fritters with sour cream and chives
- Asian-style BBQ chicken and brown rice with coriander
- Vegetable tempura bowl
- Miso-glazed salmon with sushi rice – similar salmon recipe here
- Taco pizza
- Baked potato bar
- Chicken and barley soup
- Cornmeal-crusted fish with homemade tartare sauce
- Chorizo tacos with slaw and avocado
- Sticky pomegranate chicken pieces with coriander lime rice
- Grilled Thai steak salad
- Wholewheat spaghetti with roasted cauliflower and breadcrumbs – basically this recipe with pasta
- Pan-fried wholewheat pizzas with ham and leeks

The Keepers
We found quite a few meals we will definitely make again – 16 of them in fact – and the kids were clear about the dishes they absolutely loved. The thumbs up favourites are starred 🙂

I also have to add here my personal new favourite, which wasn’t so popular with the kids – the Black bean and goat cheese quesadillas with tomato salad. Really quick and easy, and a flavour combination I wouldn’t have thought of – I think I’ll adopt it as a new work lunch 🙂
